Sweet Pickle Relish
The best sweet relish you will ever taste!
ingredients
Cucumber mixture- 12 cucumbers
- 4 onions
- 4 green peppers
- 1 red chile
- 1 jar chopped pimento
- 2 quarts water
- 5 cups sugar
- 1 quart vinegar
- 1/4 cup salt
- 1 teaspoon mustard seed
- 2 teaspoons turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice
- 2 teaspoons celery seed

Grind cucumber mixture using hand or electric grinder.

Combine pickling juice in large stockpot and boil for 5 minutes.

Add cucumber mixture.

Boil 20 minutes.

Sterilize jars and sealers in boiling water; lids in hot water.

Add relish mixture to jars leaving 1/2 inches of space at top.

Wipe edge completely and add seals.

When completely cool and sealed add rings just snug, not tight.

If a jar does not seal, refrigerate and eat.

Allow to sit and pickle two weeks.
