Texas Pralines
ingredients
- 2 c sugar
- 1 c milk
- 1 scant t. soda
- 2 1/2 c. pecan halves
- 1/2 t. vanilla extract
- 1 T. Butter

-Cut a sheet of foil 2 feet long. DO NOT USE WAX PAPER.

-In a 6 qt saucepan combine sugar, milk & soda. Cook over medium heat.

-Mixture should boil & turn brown.

-Stir, very slightly, around the edges. When a soft ball forms (234 - 240 F) in water, remove from heat.

-Add vanilla, butter & pecans.

-Beat with a wooden spoon until gloss is gone. *Note: This is a tricky step as candy can quickly turn to sugar if beaten too long!

-If mixture becomes too thick to “spoon out,” add a few drops of hot water.

-QUICKLY drop by spoonfuls on foil.

-When candy cools, store in a tightly covered container.
