Jambalaya
ingredients
- 1 c raw regular cooking rice
- 1/4 c onion flakes
- 1 1/2 tsp. salt
- 3/4 tsp. crushed thyme leaves
- 1/4 tsp. instant minced garlic
- Pinch of red pepper
- 1 bay leaf
- 1 lb, 12 oz. can whole tomatoes, crushed
- 1 1/4 c water
- 1 lb. cooked ham cut into 1" cubes
- 1 pkg. frozen peas, defrosted
- 2 1/4 lbs raw shrimp, peeled and deveined

In large pot, place first 9 ingredients and mix well. Bring to a boil.

Reduce heat. Simmer, covered for 15 minutes.

Add ham and peas. Simmer 5 minutes. Then add shrimp and continue simmering for another 5 minutes.
notes
Can be prpared ahead of time up to adding shrimp. Add ham and peas,cook, refrigerate. To reheat, bring to a boil and add shrimp.
