Best Stuffing Ever
We’ve tried many a traditional turkey day stuffing and this one is by far the best. We’ve added some things to it to make it even better.
ingredients
- 1 1/2 lbs of sweet or sage Italian sausage (cooked and drained)
- 2 T olive oil
- 1 large yellow onion, chopped
- 7 large celery ribs, chipped
- 5 garlic cloves minced
- 6 cups of day old, finely diced, good sourdough bread.
- 3 cups unsweetened cornbread, crumbled (sweetened is fine too if that’s all you have, the Jiff cheapo boxes work just fine)
- 1/2 cup butter cubed, cold
- 1 T ground sage
- 1 1/2 T poultry seasoning
- 2 cups shredded Italian cheese mix, or Mozzarella cheese
- 1 cup Parmesan cheese
- 1 cup toasted pine nuts
- 1 box chicken broth
- 2 T fresh sage

- Heat oil and add onion, celery and cook until translucent. Add garlic and cook another 3 minutes.

-Mix together breads, 3/4 cup toasted pine nuts in large mixing bowl. Add cheeses and cooked sausage to breads. Mix together with dried seasonings.

-Add sauteed veg with all pan drippings.

-Slowly add broth and stir until mixed thoroughly. The consistency should not be soupy, but very moist. If not, add more broth.

-Place in extra deep 9x13in greased pan.

-Dot the top with cubed butter and cover with foil. Bake at 375 for 45min.

-Remove foil and bake another 15 min. or until slightly crusted on the edges.

-Top with remaining pine nuts, chopped fresh sage, and some more Parmesan cheese.
