Pickled Mushrooms
ingredients
- 1 Tbsp Salt
- 1 Lb Fresh Butter Mushrooms
- 1/2 Cup Chopped Onion
- 1 Clove Garlic, Finely Chopped
- 1/4 Cup Chopped Parsley
- 2 Bay Leaves
- 1/8 Tsp Pepper
- 1/2 Tsp Dried Thyme Leaves
- 2 Cups White Wine
- 2 Cups White Vinegar
- 1/2 Cup Olive Oil
- 2 Tbsp Lemon Juice

Add Salt to 6 Cups Cold Water, wash mushrooms in this & drain

Combine remaining ingredients in large saucepan

Add mushrooms, bring to a boil

Then reduce heat & simmer, covered for 8 to 10 minuets, or until mushrooms are tender

Cool

Refrigerate, covered, at least 1 hour, or until ready to use
