Mom's Extra Moist Zuchini Bread

ingredients
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 8 ounce can crushed well drained pianapple
- 2 teaspoons vanilla
- 2 cups shredded unpeeled zucchini
- 3 cups flour
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 2 teaspoons baking soda
- 1 1/4 teaspoons baking powder
- 1 cup chopped walnuts or pecans

In large bowl, mix eggs, sugar, and oil. Beat well.

Add vanilla.

Mix in pineapple and zucchini.

Sift together flour, cinnamon, nutmeg, baking soda, and baking powder.

Add flour mixture to wet ingredients.

Mix well.

Add nuts if desired.

Pour batter into two 9 by 5 by 3 inch greased and floured loaf pans.

Bake for 1 hour at 350 degrees.
