Funeral Potatoes
ingredients
- 1/2 cup butter
- 3/4 cup chopped onion
- 2 lbs frozen hash brown potatoes (cubed or shredded), thawed
- 2 cans cream of potato soup
- 1 pint sour cream
- 6 oz shredded cheddar cheese
- 6 oz shredded Monterey jack cheese
- 1/2 cup shredded parmesan cheese
- 1/2 t pepper
- 1 1/2 cups cornflakes, crushed
directions
Saute onion in butter until tender and translucent, but not browned. Cool slightly. Combine with remaining ingredients except cornflake crumbs; put into buttered 9 by 13 baking dish. Top with crumbs. Bake at 375 for 40 minutes, or until browned and bubbling. Let stand for a few minutes before serving.
