Funeral Potatoes

ingredients

  • 1/2 cup butter
  • 3/4 cup chopped onion
  • 2 lbs frozen hash brown potatoes (cubed or shredded), thawed
  • 2 cans cream of potato soup
  • 1 pint sour cream
  • 6 oz shredded cheddar cheese
  • 6 oz shredded Monterey jack cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 t pepper
  • 1 1/2 cups cornflakes, crushed

directions

Saute onion in butter until tender and translucent, but not browned. Cool slightly. Combine with remaining ingredients except cornflake crumbs; put into buttered 9 by 13 baking dish. Top with crumbs. Bake at 375 for 40 minutes, or until browned and bubbling. Let stand for a few minutes before serving.
