Farmers Breakfast Casserole
Great to make for a brunch . . .
ingredients
- 3 Cups Frozen Hash Brown Potatoes
- 3/4 Cup Shredded Cheddar Cheese
- 1 Cup Diced Ham
- 1/4 Cup Chopped Onion
- 4 Eggs, Beaten
- 1 1/2 Cups Milk
- 1/8 Tsp Salt
- 1/8 Tsp Pepper

Coat 2-quart square baking dish with cooking oil spray.

Arrange potatoes evenly in bottom of dish.

Sprinkle evenly with ham, onion and cheese.

In a separate bowl, combine eggs, milk, salt and pepper. Pour over potatoes in baking dish.

Bake uncovered at 350° for 40-45 minutes or until a knife inserted comes out clean. Let stand 5 minutes before serving.
