Chicken Dumpling Soup
ingredients
- 3 boneless chicken breasts
- 1 box chicken stock
- 3 carrots sliced
- 2 stalks celery diced
- 1 small onion chopped
- 2 tsp basil
- 2 tsp parsley
- salt/pepper to taste
- 1/2 tsp garlic powder
- 2 1/4 cups flour
- 1 cup water
- 2 eggs

Soup:

Boil chicken until cooked. While chicken is cooking, in a soup pot mix chicken stock, carrots, celery onion, basil, parsley, garlic, salt and pepper. Bring to boil. Once chicken is cooked, cut into mini cubes. Add to broth. Reduce heat and simmer covered for 35-40 minutes.

Dumplings:

In a mixing bowl add flour, water, salt, pepper, 2 eggs. Mix together until it forms a thick batter. Pour into a pot of water at about medium temperature. Cook for about 30 minutes. Drain water and break apart into mini dumplings with a fork.
