Slow Cooker Pot Roast
ingredients
- 1 (1 1/2 to 1 3/4 lb) chuck or eye of round roast
- 1 tsp. salt
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. dried marjoram
- 1/2 tsp. black pepper
- 1 1/2 tsp Vegetable oil
- 2 c. baby carrots
- 1/2 cup chopped celery (1 rib)
- 1/2 cup beef broth
- 1/4 cup dry red wine
- 2 garlic cloves, chopped
- 3/4 c. frozen pearl onions

1. Rub roast with salt and pepper. Brown roast on all sides in hot oil in a skillet over medium-high heat (about 10 minutes).

2. Place roast in crock pot. Add carrots and remaining ingredients.

3. Cook, covered, on LOW for 10 hours or until tender. Remove roast and vegetables and slice roast.

4. Pour gravy mixture from crock pot into a gravy boat. Add cornstarch 1 Tbl at a time and microwave until desired consistency.

5. Serve gravy with roast and carrots.
