Green Beans a la Jen
My 2 favorite ways of preparing green beans - delicious!
ingredients
- 1 lb fresh or frozen snap green beans
- 3 slices bacon
- 1/2 cup chopped shallots (or onions)
- splash lemon juice
- 1 Tbsp extra virgin olive oil
- 1-2 tsp minced garlic
- 2 Tbsp soy sauce
- 1 tsp sesame oil

Steam or blanch green beans until bright green and cooked but still crunchy (about 5 minutes).

Cook bacon in large skillet over medium heat until crispy. Remove bacon from pan and set aside. Add shallots or onions to drippings in pan, saute until tender but not brown, about 4 minutes. Add beans, lemon juice and salt and pepper to taste. Toss to combine. Serve immediately.

Variation 2:

Heat olive oil in large skillet over medium heat. Add garlic (I like A LOT) and saute until very fragrant, about 3 minutes. Watch the heat as the garlic can overcook and become bitter very quickly. Add beans to pan, drizzle soy sauce and sesame oil over top. Saute, stirring constantly, for an additional minute. Serve immediately.
