Hill Country Salsa
ingredients
- 1 Can of black beans rinsed/drained
- 1 avocado, chopped
- 1 can whole kernel corn drained Fresh cilantro chopped
- 1 bunch green onions, chopped
- 1/3 cup lime juice(fresh...as usual is always BEST!!!)
- 1 green pepper, diced
- 1/3 cup olive oil
- 1 fresh jalapeno, seeded & chopped 1 tsp salt
- 4 – 6 cloves of garlic, minced
- 1 tsp cumin
- 6 tomatoes (firm), seeded & chopped (Roma Preferred)
directions
Mix all ingredients together chill and serve w/ tortilla chips or we eat it on shrimp or chicken fajitas.
