Herb-Crusted Salmon
Yet another tasty way to dress up one of our favorite kinds of fish. And really, what better way to get herbed mayo into our mouths than on a delectable bite of salmon!
ingredients
Salmon:- 2 1/2 lb Salmon Fillet
- 1/4 C Italian Parsley (finely chopped)
- 1/4 C Parmesan (grated)
- 1 t Lemon Zest
- 1/4 t Salt
- 2 Garlic Cloves (or 3, minced)
- 1 1/4 C Italian Bread Crumbs
- 1/4 C Butter (melted)
- 1/3 C Italian Parsley
- 1/4 C Green Onion (2 bunches, minced)
- 2 T Red Wine Vinegar
- 1/2 t Garlic (or 1 t, minced)
- 1/4 t Dried Oregano
- 1/4 t Pepper
- 1/8 t Cayenne
- 1 C Mayo
directions
Herbed Mayo:
In a medium mixing bowl, combine all ingredients for herbed mayo. Mix well. Refrigerate until ready to serve.
Salmon:

Preheat oven to 400°

Grease large, shallow baking dish. In a medium mixing bowl, combine parsley, parmesan, lemon zest. garlic & salt. Mix well. Add bread crumbs & toss to blend. Add 3 T melted butter & mix well. Pat salmon dry and place skin-side down in baking dish. Pack bread crumb mixture on top of salmon. Cover with foil for first 5-8 minuets in the oven. Bake an additional 6-7 minutes. Plate and serve with herbed mayo.
notes
If you're using small fillets, cook 10 minutes per inch of thickness.
