Grandma Sander Pumpkin Pie
Recipe handed down from Grandma Sander to Jean and then to John and Lynn November 24, 2005
ingredients
- Graham cracker pie crust
- 3 eggs
- 1/2 cup sugar
- 1 can pumpkin (2 cups)
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon unflavored gelatin
- 1/4 cup cold water

Separate eggs. In a clean bowl, beat 3 egg whites until foamy - gradually beat in 1/2 cup. Mix together 1 can pumpkin and 1/2 cup milk and salt, ginger, cinnamon and nutmeg. Soften 1 tablespoon unflavored gelatin in 1/4 cup cold water. Add to mixture. Cook pumpkin mixture in oven at moderate heat until thick. Let mixture cool before adding egg whites.

Bake at 425 for 10 minutes, reduce heat to 350 cook for 30 minutes more.

Garnish with cool whip.
