ingredients

  • 3 cups fresh spinach leaves
  • 1 clove garlic minced
  • 2 tsp. olive oil
  • 4 boneless skinless chicken breast halves
  • 1/4 crumbled feta cheese
  • 1 tsp. lemon pepper
  • 1/2 tsp. oregano
  • chopped fresh parsley optional

    Preheat oven to 400 degrees. In saucepan, cook spinach and garlic in oil until spinach is tender, set aside.

    Place chicken breasts between two pieces of plastic wrap and pound flat.

    Spoon 1/4 of cooked spinach down the center of each chicken half. Top with 1 tbs. of feta.

    Fold long sides in, and roll up from short end. Secure with wooden toothpicks. Coat chicken with nonstick cooking spray or brush with olive oil. Sprinkle with lemon pepper and oregano.

    Transfer chicken to shallow baking dish. Bake 20 minutes or until chicken is cooked. Top with chopped parsley and additional crumbled feta.
