Chicken Scarpiello
ingredients
- 1 lb Italian sausage with fennel
- 3 Tbls. olive oil
- 2 tbls.+ fresh garlic, minced
- 1 3 1/2 lb chicken, cut up
- 1 red pepper, cut in 1 inch squares
- 10 oz. fresh mushrooms, sliced thickly
- 1/2 cup white wine
- 1 lemon, juiced
- salt to taste
- pepper to taste
- 2 Tbls.Italian parsley, chopped

1. Prick sausage all over and place in oven-proof pan.

2. Cook in 350° oven for 30 minutes; let cool.

3. Heat 2 Tbls. oil in Dutch Oven or skillet, brown chicken pieces.

4. Remove chicken and add garlic to pan; cook for about 30 seconds.

5. Add red pepper and mushrooms and saute for 2 minutes.

6. Cut sausages into 1 inch pieces

7. Add vegetables, wine, lemon. juice, sausages and chicken to mixture.

8. Season with salt and pepper and cook, covered, until tender.

9. Sprinkle with parsley.
