Chicken Cacciatore
The chicken in this dish comes out so tender.
ingredients
- 6 chicken drumsticks
- vegetable or olive oil
- salt and pepper
- 1 large onion, chopped
- 1 red bell pepper, sliced
- 4 garlic cloves, chopped
- handful of kalamata olives, without pits and sliced
- 1/2 c. dry red wine
- 28 oz. can of chunky crushed tomatoes with juice
- 1/2 - 1 cup chicken broth
- 2 tbsp. sour cream
- Cooked white rice or buttered noodles for accompaniment

Boil chicken in water until skin turns opaque. Remove and let cool until skin may be removed. Pat dry and sprinkle with salt and pepper. Heat oil in deep, heavy skilled over medium-high heat until hot but not smoking. Brown chicken in 2 batches, turning over once. Transfer chicken to plate.

Reduce heat to medium and add onion, bell pepper, garlic, and olives. Stir and cook until onion and garlic are golden. Add wine and simmer, scraping bottom of pan for any brown bits, until liquid is reduced by half. Add tomatoes with their sauce and simmer, breaking up tomatoes with spoon. Cook for 5 minutes. Add chicken stock and nestle chicken pieces in sauce.

Simmer, loosely covered, until chicken is cooked through (35-45 minutes). Season with pepper and salt if necessary. Remove from heat and stir in sour cream before serving.
