Chicken Fajitas

These fajitas rival the Mexican restaurant’s down the street.

ingredients

  • 1 onion, sliced
  • 1 red or yellow bell pepper, sliced
  • 4 chicken breasts, cut into strips
  • 1 tbsp. vegetable or olive oil
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. each: dried oregano and black pepper
  • 1/2 tsp. salt
  • 1 crushed garlic clove
  • 3 drops Tabasco sauce
  • 1 tbsp. freshly squeezed lime juice
  • 1 tomato, chopped
  • handful cilantro sprigs
  • Monterey Jack, cheddar, or Colby cheese, shredded
  • warm tortillas
  • shredded lettuce
  • salsa

    Slice onion, bell pepper, and chicken into strips. Heat 2 tbsp. oil in large frying pan over medium heat. When oil is hot, add chicken. Sprinkle with chili powder, cumin, oregano, pepper, and salt. Stir frequently until lightly golden and slightly firm. Place on plate and cover to keep warm.

    Reduce heat to medium low. Add remaining oil. Add garlic, onion, and bell pepper. Stir until softened. Return chicken to pan. Stir Tabasco into lime juice in small bowl, and drizzle over chicken and vegetables. Stir until well-covered and chicken is hot. Sitr in a tablespoon or two of cilantro. Pour contents into large serving bowl.

    Serve with warm tortillas, tomatoes, salsa, lettuce, cheese, and cilantro on side.

notes

The chicken in this recipe could easily be replaced by large shrimp.
