Marinated Peppers, Olives & Cheese
ingredients
- 6 large red & green peppers
- 1 cup whole Greek olives
- 4 oz Mozzarella cheese, cubed
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tbsp parsley
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/8 tsp sage
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 large cloves garlic, finely chopped

Set oven to broil.

Broil peppers w tops about 5 inches from heat, turning occassionally until skin is blistering and evenly browned.

Place peppers in plastic bag and close tightly for 20 minutes. Then remove skin, stems, seeds and membrances. Cut into 1/4 inch strips.

Place peppers, olives & cheese in glass or jar

Shake remaining ingredients together and pour over peppers, etc.

To serve immediately, cover and refrigerate 4 hours.

Store tightly covered in fridge up to 2 weeks.
