Spicy Warm Butternut Squash Soup

ingredients

  • 2 medium butternut squash
  • 1/2 red bell pepper
  • 1 large onion
  • 1 large carrot
  • 1 celery stick
  • 1 apple
  • 1 teaspoon garlic
  • 2 teaspoon cumin
  • 1 teaspoon curry
  • Cooking water from squash
  • 2 cans (14 oz) Vegetable stock
  • olive oil
  • 2 teaspoons butter
  • 1 cup pumpkin
  • season salt, salt, pepper to taste
  • Nutmeg to taste
  • Fresh Parsley and sour cream (optional)

directions

Chop and saute veggies in olive oil. Peel and cube squash - boil. Puree all ingredients in food processor. Incorporate all ingredients and spices in the soup pot. Simmer for 30 - 45 minutes for flavors to blend. Serve with nutmeg and fresh parsley. Sour cream is optional.
