Oly's Butternut Squash Soup
Spicy Warm Butternut Squash Soup
ingredients
- 2 medium butternut squash
- 1/2 red bell pepper
- 1 large onion
- 1 large carrot
- 1 celery stick
- 1 apple
- 1 teaspoon garlic
- 2 teaspoon cumin
- 1 teaspoon curry
- Cooking water from squash
- 2 cans (14 oz) Vegetable stock
- olive oil
- 2 teaspoons butter
- 1 cup pumpkin
- season salt, salt, pepper to taste
- Nutmeg to taste
- Fresh Parsley and sour cream (optional)
directions
Chop and saute veggies in olive oil. Peel and cube squash - boil. Puree all ingredients in food processor. Incorporate all ingredients and spices in the soup pot. Simmer for 30 - 45 minutes for flavors to blend. Serve with nutmeg and fresh parsley. Sour cream is optional.
