Sticky Mango Chicken
ingredients
- 2 chicken breast fillets, cut in half
- Marinade
- 2 Tbs mango chutney
- 1 Tbs drak brown sugar
- juice of 1/2 lime
- 1 tsp soy sauce
- ground black pepper
- Spinach and Mango Salad
- 1 1/2 c. baby spinach
- 1/2 large mango, peeled, pitted, and chopped
- 1/3 c. dried cranberries
- 1 1/2 Tbs toasted pine nuts
- Dressing
- 3 Tbs vegetable oil
- 1 Tbs balsamic vinegar
- 1 tsp sugar
- salt & pepper
directions
Mix together the mango chutney, sugar, lime juice, soy sauce,and pepper. Pour this over the chicken and leave to marinade for at least 1 hour, turning occasionally. Preheat the broiler to medium-high. Drain the marinade from the chicken and reserve. Place the chicken on a baking sheet. Broil for about 6 minutes and then drizzle with a little of the marinade and continue to cook for about 3 minutes or until the chicken is turning golden and cooked through. Meanwhile, mix together all the ingredients for the salad dressing. In a bowl, combine the spinach, mango, cranberries, and pine nuts, if using, reserving some for sprinkling. Toss with the dressing. Serve the chicken on a bed of the salad. Sprinkle with toasted pine nuts.
