Pumpkin Bread
An easy way to impress friends and neighbors with how you baked. Like carrot cake, it gives the illusion of being healthy, so you won’t hear griping from that sanctimonious yoga crowd even though there’s a cup of oil involved. It also makes two loaves. . . one for you, one to share. How precious! (It’s only because one loaf uses but half a can of pumpkin.)
ingredients
- 3 cups sugar
- 1 cup vegetable or canola oil
- 4 eggs
- 1 can pumpkin, not sweetened, such as Festal
- 3 1/2 cups flour
- 1/2 tsp. baking POWDER
- 2 tsp. baking soda
- 2 tsp. salt
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. allspice
- 2/3 cup water
directions
Preheat oven to 350°. Combine sugar and oil. Add eggs. Mix. Add pumpkin. Mix. Put dry ingredients in separate bowl and sift together (or just whisk). Dump that in, then the water. Mix. Put in 2 (two) loaf pans. Bake for an hour.
