Patty O'Brion's Colcannon
ingredients
- 6 medium potatoes, peeled and quartered
- 4 cups shredded cabbage
- 1 cup chopped onion
- 1/4 cup butter or margarine
- 1/2 to 3/4 cups milk
- 1 tsp salt
- 1/8 tsp. pepper
- 1 tbs. snipped parsley
directions
Cook potatoes in salted water until tender; drain. Cook cabbage and onion in salted water; drain. Mash potatoes, heat in butter and as much milk necessary to make fluffy. Add salt and pepper, stir in cabbage and onion. Top with parsley.
