Green Chile and Cheese Enchiladas
ingredients
- 3/4 cup shredded El Mexicana Queso
- Fresco Casero or Jack cheese
- 3/4 cup shredded El Mexicana Oaxaca Cheese
- 1/2 cup finely chopped onion
- 1 (4-oz.) can diced green chiles
- 1 (19-oz.) can enchilada sauce
- 12 Abuelita?s Corn Tortillas (any variety)
- 1/2 cup crumbled El Mexicano Cotija Cheese
- Guacamole, El Mexicana Crema Fresca,
- cilantro leaves (optional)

Preheat oven to 375°F. Stir together shredded cheeses, onion and chiles in a medium bowl. Pour a small amount of enchilada sauce in the bottom of a 13-by-9-inch baking dish. Soften tortillas in the microwave or in a skillet. Place equal amounts of cheese mixture in each tortilla and roll up. Place seam side down in prepared dish and pour remaining enchilada sauce over top; sprinkle with crumbled cotija cheese. Tent loosely with foil and bake for 30 minutes. Serve with guacamole, crema fresca and cilantro leaves, as desired.
