Zucchini Bread
This delicious zucchini bread was much-loved in our neighborhood when we were kids. Neighbors would bring zucchini to Mom in exchange for her bread. Then she’d make enough for their family and ours.
ingredients
- 3 eggs
- 2 cups granulated sugar
- 2 cups grated raw zucchini
- 3 tsp vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
- 3 tsp cinnamon
- 1 cup nuts (I use pecan)
- 1 cup raisins
- 1/2 cup cooking oil
directions
Preheat oven to 350°F. Grease well and flour two 9x5x3 inch loaf pans. Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly, but well. Combine flour, salt, baking soda, baking powder and cinnamon. Add to the egg/zucchini mixture. Stir until well blended. Add nuts and raisins. Pour into two 9x5x3 inch loaf pans. Bake for one hour.
notes
Use olive oil or other heart-healthy oil to make this a really healthy treat.
