Indian Tomato Salad (also known as kachoomber)
This is delicious when made ahead and cooled in the fridge. Serve with the Indian Spicy Chicken in the Meat section!
ingredients
- 1/4 cup vegetable oil
- 2 tbsp wine vinegar
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1/4 tsp ground cumin
- 1/4 tsp each salt and pepper
- 1/4 cup chopped fresh mint
- 2 large tomatoes, sliced
- 1 onion, thinly sliced (sweet white onion)
- 1 piece (7 inches) English cucumber, thinly sliced
- Fresh mint leaves

In large bowl, whisk together oil, vinegar, lemon juice, garlic, mustard, cumin, salt and pepper. Stir in mint.

Add sliced tomatoes, onion and cucumber, toss gently.

Cover and refrigerate for up to two hours.
