ingredients

  • 8 oz cooked mini penne pasta
  • 1 lb sweet Italian sausage
  • 8-12 oz fresh mushrooms, sliced
  • 2 cans petite diced tomatoes, drained (keep juice)
  • 6 oz feta cheese
  • 1-2 Tbsp minced fresh basil

directions

  • 1

    Brown sausage, drain grease. Set aside on paper towels.

  • 2

    Saute mushrooms in 2 Tbsp olive oil for 5 mins.

  • 3

    Add tomatoes, pasta and sausage. Heat through.

  • 4

    Remove from heat, add cheese and basil. Mix well.

  • 5

    Add remaining juice from tomatoes.
