Penne from Heaven

  • 8 oz cooked mini penne pasta

  • 1 lb sweet Italian sausage

  • 8-12 oz fresh mushrooms, sliced

  • 2 cans petite diced tomatoes, drained (keep juice)

  • 6 oz feta cheese

  • 1-2 tbsp minced fresh basil

  • Brown sausage, drain grease. Set aside on paper towels.

  • Saute mushrooms in 2 tbsp olive oil for 5 mins.

  • Add tomatoes, pasta and sausage. Heat through.

  • Remove from heat, add cheese and basil. Mix well.

  • Add remaining juice from tomatoes.
