Country Chicken & Dumplings
Phil’s favorite, a must have for all family get togethers!
ingredients
- 3 - 3 1/2 broiler - fryer chickens
- 2 stalks celery, cut into pieces
- 2 C all purpose flour
- 1 t salt
- 2 quarts water
- 2 t baking powder
- 1/4 C margarine or butter
- 1/2 t salt

Place chicken in a dutch oven, add water, celery, and salt. Bring to a boil, reduce heat and simmer 1 hour or until tender.

Remove chicken from broth and cool.

Discard celery, de-bone chicken, cut meat into bite size pieces, set meat and 3/4 C broth aside.

Bring remaining broth to a boil.

Combine flour, baking powder, and 1/2 tsp salt, cut in butter until mixture resembles coarse meal.

Add 3/4 C broth, stirring with fork until dry ingredients are moistened. Turn dough out onto well floured surface and knead.

Pat dough to 1/4 inch thickness, cut dough in 4 in by 1/2 inch pieces and sprinkle with additional flour.

Drop dough into broiling broth and cook for 15 minutes.

Add chicken pieces back to broth and serve.
