Charro Beans
Smokey, brothy beans.
ingredients
- 1 lb. dried pinto beans
- 2 large onions, chopped
- 6 cloves garlic, minced
- 4 or 5 fresh jalapenos, stemmed, seeded & diced
- 6 bacon strips, chopped
- 1/2 cup thinly sliced ham
- 4 tomatoes, chopped
- 1/2 cup cilantro leaves, chopped
- 4 green onions,chopped
- 1 quart chicken stock
- water to cover beans

Sort beans to remove rocks & foreign matter. Place beans in colander and rinse under hot water 2 or 3 minutes.

Place beans in large pot and add chicken broth, then water, to cover.

Add bacon, chopped onions, jalapenos, tomatoes, ham and garlic.

Bring to a boil, cover and reduce heat. Simmer on low until beams are almost done (about 1 1/2 hours).

Add green onion and cilantro. Salt to taste.

Simmer another 30 minute. Serve
notes
Beans will be more tender if soaked in cold water 2 hours or overnight.
