Vanishing Oatmeal Raisin Cookies
I’ve doctored this recipe so that it is a healthy snack alternative. These cookies taste so good I wonder how they can be healthy!
ingredients
- 1 stick of butter or margarine(I use butter)
- 1/2 cup Crisco shortening
- 1/2 cup Splenda brown sugar
- 1/4 cup sugar in the raw
- 1/4 cup Splenda
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups Quaker Oats
- 1/2 cup raisins
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts

Heat oven 350°. Beat together butter, shortening and sugars until creamy. Add eggs and vanilla, beat well. Combined flour, baking soda, cinnamon, and salt, mix well. Stir in oats, raisins, chocolate chips, walnuts and mix well.

Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10-12 minuted or until golden brown. Cool 1 minute on cookie sheet, remove to wire rack.

Cookies will keep about a week in an airtight container.If they last that long!
