Beef & Broccoli Stir Fry
Maddy’s a meat eater, so she and David eat a lot of the beef - Jonah and I eat the broccoli and rice.
ingredients
- 8 oz. top sirloin, cut into 1/4" strips
- 3 T soy sauce
- 1 T Sherry (wine not vinegar)
- 1 T brown sugar
- 1 T oriental sesame oil
- 3 lg. cloves garlic, minced
- 1 2inch piece ginger, peeled & minced
- 2 c. broccoli florets
- 1 T peanut or other veg. oil
- 2 c. pea pods (I sometimes use mushrooms here)
- 6 green onions, cut into 1"long pieces
- 1/2 red bell pepper, sliced
- 1 t. cornstarch

Combine first 7 ingredients (and refrigerate up to 4 hours if you have time).

Cook broccoli in boiling salted water until crisp-tender, about 2 minutes, drain, and rinse with cold water.

Heat oil in large skillet (or wok) over high heat. Using slotted spoon, tranfer beef from marinade to pan. Reserve marunade. Stir fry beef until no longer pink, about 2 minutes. REMOVE.

Add broccoli, pea pod (or mushrooms), green onions, and red bell pepper. Stir fry until vegetables are crisp-tender, about 3 minutes.

Stir cornstarch into reserved marinade. Pour marinade over vegetables in wok. Add beef and cook until liquid boils and thickens, 1-2 minutes. Serve over rice.
