Grecian Scallops
ingredients
- 3 Tablespoons Olive Oil,
- 1 1/2 Lbs. Sea Scallops
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Fresh Ground Black Pepper
- 2 Green Peppers, cut into thin strips
- 1 Sweet Red Pepper, cut into thin strips
- 1 Small Onion, sliced
- 2 Cloves Garlic, minced
- 5 Large Plum Tomatoes, coarsely chopped
- 1/2 Cup Dry White Wine
- 16 Kalamata Olives
- 2 Teaspoons Fresh Oregano, chopped
- 6 Ounces Crumbled Feta Cheese
directions
Lightly oil a large, flat casserole. Arrange scallops evenly, sprinkle with salt and pepper. In a large skillet, cook onions, peppers and garlic in 2 tablespoons of olive oil over medium heat. Stir constantly until tender. Add tomatoes and everything but the cheese, stir five minutes. Pour over scallops, sprinkle Feta cheese on the top. Bake at 450 degrees for 15 minutes or until scallops are white and cheese is slightly brown.
