String Beans

ingredients
- 3 pounds green beans, trimmed
- 1/2 pound bacon, cut into thin strips
- 1/2 cup shallot (about 3)
- 2 chopped garlic cloves
- 1/4 cup sherry wine vinegar (or red vinegar)
- 3 tablespoons Dijon mustard
- 1 teaspoon dry mustard
- 1/2 cup olive oil
- 1 cup crumbled chilled goat cheese
- 1/2 cup fresh pomegrante seeds or dried cranberries

Cook beans in boiling water for 5 minutes, drain and rinse with cold water.

Cook bacon.

In bacon pan, add shallots and garlic to drippings.

Sauté for 1 minute; add vinegar, mustard, dry mustard, wisk in oil, scrape up browned bits, toss and sprinkle with bacon, pomegrante and goat cheese.
