Satay Dip
ingredients
- 1 tbsp. olive oil
- 1 tbsp. dark seseme oil
- 2/3 c. small diced red onion
- 1 1/2 tsp.(2) garlic cloves
- 1 1/2 tsp. fresh ginger root
- 1/4 tsp. crushed red pepper flakes
- 2 tbsp. red wine vinegar
- 1/2 c. light brown sugar, packed
- 2 tbsp. soy sauce
- 1/2 c. peanut butter
- 1/4 c. ketchup
- 2 tbsp. dry sherry
- 1 1/2 tsp. freshly squeezed lime

Cook olive oil, sesame oil, red onion, garlic, ginger and red pepper flakes in a small heavy bottomed pot on med. heat until onion is transparent (10-15 minutes)

Whisk in vinegar, through lime juice. Cook and use as a dip for grilled lemon chicken
