Greek Pasta Salad
ingredients
- 12 ounces of penne pasta
- 2 cups of cherry tomatoes, quartered
- 1 medium cucumber, halved
- 4 green onions, sliced
- 1/3 cup pitted katamata olives, halved
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 2 tbls. fresh basil - snipped
- 2 tbls fresh oregano - snipped
- 4-6 garlic cloves, minced
- 1/4 teas salt
- 1/4 ground black pepper
- 1 cup crumbled feta cheese (4 oz)

Cook pasta, drain, rinse with cold water and drain again.

In a large bowl, toss together the cooked pasta, tomatoes, cucumbers, green onions and olives.

In a screw top jar, combine the olive oil, lemon juice, basil, oregano, garlic, salt and pepper. Cover and shake well. drizzle over pasta and toss to coat.

Cover and chill in refrigerator for 2 to 24 hours. Add feta cheese and toss.
