Blueberry Fairy Muffins
When the blueberry fairy comes to visit and fills your freezer with blueberries, make these wonderful muffins. You might want to make an extra batch, as these muffins seem to disappear right out of the oven.
ingredients
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 1/2 cup flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh or frozen blueberries
directions
Mix dry and wet ingredients in separate bowls. Mix dry and wet together just until the flour is moistened. Fold in blueberries. Batter should be lumpy. Fill muffin sups 2/3 full. Bake 20-25 minutes or until golden brown at 400. Immediately remove from pan. Best if served warm.

Karin never saw Becky buy blueberries, so we joked that it was the blueberry fairy who would put them in our fridge... hence, blueberry fairy muffins
