Buttermilk Biscuits
ingredients
- 4 C flour
- 1/4 C sugar
- 2 T baking powder
- 2 t salt
- 3/4 C (1.5 sticks) chilled unsalted butter, cut into small pieces
- 1.5 C chilled buttermilk
- 1/4 C finely chopped chives (green onion)
- 1 large egg, beaten to blend (for glaze)

Whisk first four ingredients together. Add butter and buttermilk and blend. Add chives and egg.

Stir until moist clumps form, adding more milk if dough is dry.

Divide dough in half, flatten each to 3/4 thickness.

Cut out biscuits with 2 inch diameter cutter.

Place on ungreased baking sheets and brush tops with egg glaze.

Bake about 16 minutes at 425°
