ingredients

  • l c brn sugar
  • l c white sugar
  • l c vegetable oil
  • 3 eggs
  • l tsp vanilla
  • 2 c grated, raw, zucchini (I never peeled)
  • 3 c flour
  • l tsp baking soda
  • l tsp salt
  • l/4 tsp baking powder
  • 2 tsp cinnamon
  • 2 tsp mapeline...I use Maple flavor, like vanilla, lemon, etc.
  • l c chopped nuts...I didn’t use nuts cause you guys didn’t LIKE nuts....but I added for company

Mix all in mixmaster and bake @ 300 for 25min. That doesn’t sound rite, I make this in 3 small loaf pans and a coffee tin. It takes longer than 25 min to bake. I never had any luck with regular bread loaf pans and always bake in those small loaf pans, this is delicious.
