Microwave Southern Praline
Another favorite praline recipe - I cannot remember it ever failing. When I make Christmas candy, I have the oven, stove top, and microwave going. The kitchen is a disaster but I only have to clean at the end of the day.
ingredients
- 1 1/2 cups firmly packed light brown sugar
- 2/3 cups half and half
- 1/8 tsp. salt
- 2 TBS. margarine
- 1 1/2 cups pecan halves

Combine sugar, half & half, and salt in deep casserole; mix well. Stir in butter; microwave on high for 9 - 10 1/2 minutes or until mixture reaches soft ball stage, stirring once.

Stir in pecans; cool 1 minute. Beat by hand until mixture is creamy and begins to thicken (about 3 minutes.) Drop by tablespoons onto wax paper. 2 dozen pralines.
