Emerald Salad
ingredients
- 1 pkg. lime Jello
- 1 pkg. lemon Jello
- 2 c. boiling water
- 1 1/2 c. liquid (juice from canned fruit plus water)
- 1 c. chilled evaporated milk
- 12 oz. cottage cheese
- 1 (15 oz.) can crushed pineapple (drain and reserve juice)
- 1/2 c. chopped pecans
- 1/3 c. mayo
directions
Dissolve Jello in 2 c. boiling water, then add juice and water. Let set until firm and then whip until frothy. Add evaporated milk and whip again. Add remaining ingredients, folding in well. Chill until firm.
