Butter Bean Soup
My mom gave me this recipe during our first year of marriage. This is from the women of Munich, ND, known for their AMAZING cooking. Again, a simple recipe for a quick meal and served best with a green salad and bread!
ingredients
- 1 15 oz can butter (or other white bean) beans
- 1 14 oz can stewed tomatoes
- 1 Tbls dried mince onion
- 1 1/2 tsp sugar
- 1 Tbls olive oil
- 1/4 tsp seasoned salt (I just use a tad more salt instead of seasoned salt)
- dash of pepper
- 3 Tbls diced celery
- 3 Tbls diced green pepper
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp chili powder
directions
Combine all ingredients and bring to a boil. Reduce heat and simmer for 15 minutes.
