Kebob's Your Uncle
This recipe has become an easy entertaining summer staple! Calgary visit 2007
ingredients
- Marinade:
- 1/2 cup unsweetened pineapple juice
- 1/4 cup barbecue sauce
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped green onions
- 2 tbsp reduce sodium soya sauce
- 2 tbsp balsamic vinegar
- 1 tbsp grated gingerroot
- 2 tsp minced garlic
- 1/2 tspfreshly ground black pepper
- 1/4 tsp salt
- 1 3/4 lbs steak and or chicken
- 16 chunks fresh pineapple
- 16 chunks red or green pepper
- 16 whole sized mushrooms
- Metal / wood skewers

Whisk together all marinade ingredients in a small bowl. Place meat cubes in a large; heavy-duty, plastic bag. Add marinade and seal bag. Turn bag seceral times to coat meat with marinade. Marinate in refrigerator for at least 1 hour. (longer if possible)

Pre-heat grill to high setting. Alternately thread marinated beef cubes, pineapple, bell peppers, mushrooms onto skewers. Place kebobs on a grill rack that has been coated with cooking spary or lightly brudhed with oil. Grill 8 to 10 minutes, turning occasionally, until meat is cooked to desired degree of doneness. If you to baste kebobs with the leftover marinade, boil it firt to kill any bacteria
