Chinese Cole Slaw
Since there is no dairy in this cole slaw, it is very portable to bring to parties. Also, it lasts well in the refrigerator for leftovers for several days.
ingredients
Slaw ingredients:- 1 package dry ramen noodles
- 4 green onions, sliced
- 1/4 cup slivered (or sliced) almonds, toasted
- 1/4 cup sesame seeds
- 1 bag cole slaw from salad section
- 1/2 cup vegetable oil
- 2 TB seasoned rice vinegar (e.g., Nakano brand)
- 1/4 cup sugar or Splenda
- 2 tsp salt
- 1/2 tsp pepper

Break up ramen noodles while still in package and discard the seasoning packet.

Add cole slaw to large bowl. Sprinkle onions, broken ramen noodles, toasted almonds and sesame seeds on top.

Add dressing ingredients in a bowl and whisk until well blended. Pour into bowl of slaw and mix well. Add additional salt to taste. Cover and refrigerate at least one hour.
notes
If you can find it at your store, broccoli slaw is a wonderful substitute for traditional cole slaw.
