Martha's Mashed Potatoes
Delicious and rich!! Don’t stand on a scale while making these, just enjoy!
ingredients
- 2 1/2 pounds Yukon gold potatoes
- 1 stick of butter, cut into several pieces and softened
- 8 ounces cream cheese, cut into several pieces and softened
- 1/4-1/2 cup heavy cream, warmed
- salt and pepper to taste

Peel and cut potatoes into 1-2 inch chunks.

Cover with cold water and bring to a boil. Simmer for 12-15 minutes until potatoes are tender when pierced with paring knife.

Drain potatoes and return to pot; let stand for a few minutes to dry. Place potatoes in ricer and rice into mixing bowl; or alternatively mash with potato masher.

Add butter, cream cheese and 1/4 cup of cream. Mix until well incorporated, adding more cream if needed. Season with salt and pepper to taste.
