Cranberry Buttermilk Scones
I love, love, love these. They are so satisfying. I sometimes substitute raisins or dried currants for the cranberries.
ingredients
- 3 c. flour
- 1/3 c. plus 2 Tbsp. sugar, divided
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. cold butter
- 1 c. buttermilk
- 1 c. dried cranberries
- 1 Tbsp. milk
- 1/4 tsp. cinnamon
directions
Preheat oven to 400°. In a bowl combine flour, 1/3 c. sugar, baking powder, salt and baking soda. Cut in butter. Stir in buttermilk, just until combined. Fold in cranberries. Turn onto floured surface and divide dough in half. Shape each half into a ball and pat into a 6" circle. Partially cut each circle into 6 wedges. Place on lightly greased baking sheet. Brush with milk. Combine cinnamon and remaining sugar and sprinkle generously over scones. Bake for 15-20 minutes, or until golden. You can test for done-ness but sticking a toothpick into the dividing cuts.
