Braised Boneless Short Ribs
ingredients
- 4 1/2 lbs. boneless beef short ribs, cut into 1 1/2" pieces
- 1/2c. flour
- 1/4c. plus 1T olive oil
- 4 carrots cut into chunks
- 6 ribs of celery
- 2 onions, chopped coarsely
- 3 bay leaves
- 8 cloves of minced garlic
- 3T. tomato paste
- 1/2 bottle red wine
- 6c beef broth
- Kosher salt & pepper

Season meat w/salt & pepper. Heat Dutch oven w/3T oil. Dredge meat in flour & add to pan, browning on each side. Set aside.

In same pot, add 3T of olive oil, carrots, celery, onions, & bay leaves. Cook for 5 min. Add garlic & stir another minute. Add tomato paste & cook for a minute. Add wine & stock & bring to a boil. Return meat to pot & cook @ medium-low heat for 2 1/2 hrs. Make sure there is always 2" of liquid.
