Pumpkin Dessert
These take a little time to make, but are well worth the wait.
ingredients
Crust and Base- 1 1/2 Cups Graham Crackers (Crushed)
- 1/4 Cup Butter (Melted)
- 8 Oz Cream Cheese
- 2 Eggs
- 1 tsp Vanilla
- 3/4 Cup Brown Sugar
- 1 Envelope Unflavored Gelatin
- 3 Egg Yolks (Lightly Beaten)
- 3/4 Cup Milk
- 1 1/4 Cups Pumpkin
- 3 Egg Whites
- 1/3 Cup Sugar
- 1 tsp Nutmeg
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/4 tsp Ginger
- Whipped Cream

Combine graham crackers and butter.

Press into a greased 9x13 pan.

Blend cream cheese, sugar and eggs together (add eggs one at a time).

Add vanilla

Spread over graham crust in and bake at 350 for 15 minutes.
Topping

Combine brown sugar, gelatin, salt and spices in a saucepan.

Combine egg yolks and milk, and add to brown sugar mixture.

Cook until it comes to a boil (stirring constantly).

Remove from heat and stir in pumpkin.

Chill until cool but not firm.

Beat egg whites until stiff and add 1/3 Cup sugar.

Fold egg whites into pumpkin mixture.

Spread on top of crust and frost with whipped cream.
