Asian Noodle Salad with Peanut Dressing
ingredients
- Dressing:
- 1 T. low-sodium soy sauce
- 3 T. peanut butter
- 2 T. hoisin sauce
- 4 T. hot water
- 2 T. lime juice
- 1 t. hot sauce
- Noodle Salad:
- 1 pkg (8.8 oz.) soba noodles
- 1 cup 2 in. zucchini spears
- 1 cup carrots, matchstick cut
- 1 cup bell pepper, thinly sliced
- 1 cup snow peas, ends trimmed
- 1/2 cup chopped scallions, green only
- 1/2 cup bean sprouts
- 1/2 cup cilantro

1. In blender or food processor, puree dressing ingredients until smooth. Thin with additional water if needed, adding 1 tablespoon at a time.

2. In medium pot, cook noodles in boiling water until tender, about 5 minutes. About 30 seconds before removing noodles, add zucchini & carrots. Drain, rinse briefly with cold water, drain again.

3. Place cool, drained noodles, zucchini, & carrots in large bowl. Add pepper, snow peas & scallions. Pour dressing over mixture & toss.

4. Divide salad among 4 plates & garnish with sprouts & cilantro. Enjoy!
