Speedy Shrimp Scampi

ingredients

  • 2 Tblsp. green onion, sliced
  • 1 1/2 Tblsp. fresh lemon juice
  • 1/4 tsp. salt
  • 2 large cloves garlic, minced
  • 1/3 cup butter, melted
  • 3/4 lb. large fresh shrimp, peeled and deveined
  • 2 Tblsp. fresh parsley, minced
  • 1/4 tsp. hot sauce
  • hot angel hair pasta, cooked

directions

    Cook first 4 ingredients in butter in a large skillet over medium high heat, stirring constantly, until mixture is bubbly.

    Reduce heat to medium; add shrimp to onion mixture, and cook, stirring constantly, 5 minutes or until shrimp turn pink.

    Add minced parsley and hot sauce to shrimp mixture; toss gently. Serve over pasta. Garnish with lemon slices and fresh parsley, if desired.

    NOTE: Put on the water for the pasta to boil first thing, and this dish will be ready in about the same time it takes the pasta to cook.
