Dad's Fish Scallopine
adapted from James Beard’s Menus for Entertaining
ingredients
- About 1 1/2 pounds fish fillets (tilapia, flounder or sole)
- flour
- 6 tbl. butter
- 2 tbl. olive oil
- grated rind of lemon
- 3 or 4 lemon slices
- Fresh parsley or tarragon

Dust fish fillets with flour, saute quickly on each side in the butter and oil. (Cook even more quickly per side for flounder or sole since fillets are thin.)

Add the lemon rind, slices and juice and simmer for three to four minutes.

Add a dash of white wine (or vermouth). Adding some capers at this point is a nice touch.)

Sprinkle with chopped parsley or fresh tarragon.
